How to can salsa

This is the salsa recipe. It's super tasty if you like salsa with a bit of a kick.

25 med-lg tomatoes
5 green bell peppers
3 yellow bell peppers
3 onions
1/2-1 whole bunch of cilantro
6-9 Jalapeno peppers
3-4 cloves garlic
1/2 cup cider vinegar
1/4 cup salt

The peppers taste best if you grill them until the skin is all charred. Then you peel the peppers and get rid of the seeds. Peel and de-seed the tomatoes too. Next you need to chop up all the veggies (I just put them in my little food processor to chop them pretty fine) and put all the ingredients in a big pot. Heat to simmering for 25-30 minutes. Then put them in the jars and process.
Process 35min. for pints and 45 min for quarts
Makes about 8 pints per batch.

Do you still use the plastic gloves Abby?? I learned the hard way to use like toilet yellow plastic gloves (obviously brand new) when peeling and de-seeding those jalapenos... The juices really burned my skin once.. and it hurt for about 12 hours! So... that's my tip for anyone making salsa!! Good luck!!

Good point! I did wear my heavy duty gloves to protect my skin. No burns!
